My first recipe post

Cooking a detailed recipe when you have a 6 month old baby who wants you by her side is quite a daunting task,so what I cook are easy ones with can be done fast and ones which don't require your undivided attention.
I will start my blog with this simple soya recipe was created when we didn't have anything else to cook with.Personally I used to hate soya ,the bland soya chunk curry in our college mess was unpalatable.:I used to look down at the soya with arrrrgh not again!Asish(my husband) kind of likes soya,so we thought we will give it a try and this recipe was born.

CHEESY SOYA CHUNK NOODLES
Ingredients
Rice noodles/sevai (a cheaper option):250 gms
Soya chunks:100 gms
Bell pepper green:1
Onion:2 medium
Tomatoes:2 ripe
Ginger garlic paste:1 tsp
Red chilly powder:1 1/2tsp
Garam masala powder:1 1/2 tsp
Tomato ketchup: 2 tbs
Chilly flakes:1/2 tsp

Italian seasoning: a pinch
oil:1 tbs 
Cheese: 2 tbs
Salt to taste: 
Method
  1. Boil rice noodles according to instruction on the packet with 1 tsp op oil and a pinch of salt till done,drain wash in cold water and keep it aside
  2. Cook soya chunks in boiling water for 5 minutes.take out the soya chunks.wash in cold water, press out the excess water and set it aside
  3. Add oil in a pan ,saute the finely chopped onions along with ginger garlic paste till starting to brown
  4. Add tomatoes which are coarsely cut ,cook covered for 5 minutes
  5. Lower the flame,add chilly powder,garam masala and mix well
  6. At medium flame add tomato ketchup,Italian seasoning and mix well.
  7. Add the soya chunks stir well for a couple of minutes,and salt to taste,add 1/4 cup water and cook till all the water is absorbed
  8. Add the sliced capsicum and cook for another 2 minutes
  9. Toss in the noodles,mix well and cook for a couple of minutes
  10. Check the seasoning and add more salt if necessary
  11. Add 2 tbs of grated cheese and cook covered for a few minutes till cheese melts(this is an optional step)
  12. Serve the noodles with a dash of  ketchup
